Hen of the Woods
SOLD OUT.Hen of the Woods, also known as Maitake, is one of the largest wild edible mushrooms outside of the Giant Puffball. They can weigh up to several pounds and
are quite easy to identify, looking like a large mass of fused caribou antlers. Highly prized in both the Culinary and Medicinal communities. They can be grilled like a steak or chopped into
smaller pieces and added to pasta, soups, stews . . . OR . . . simply sautee them in garlic and butter. Hen of the Woods also contain chemicals that help fight tumors, stimulate the immune
system, and lower blood sugar levels.
We will be searching for these as well as Honey Mushrooms, Gem Studded Puffballs, Pear Shaped Puffballs and more.
As an added incentive, all participants will receive a large Hen of the Woods from Shogun Maitake.

One of our favourite mushrooms of Autumn. These beautiful mushrooms have a slight
sweetness to them. They are quite meaty meaning you can either sautee them or roast them. Found under conifer trees, these fungi
grow alongside their sister mushrooms, The Blewits. We will also be searching for other mushrooms such as Velvet Foots, Grey Trichs,
and Pear Shaped Puffballs.

Shrimp of the Woods. They get their name, not from their taste, but from the pink and white interior that resembles shrimp.
Our favourite way to prepare: harvest firm, whitish-inside specimens, brush off dirt, and cook slowly to caramelize them before
adding them to dishes.
Along with these we will be searching for Lepista Irina,Pear Shaped Puffballs and Gem Studded mushrooms.

On this Autumn morning we take to the trails in search of the wild
edibles of Mother Nature.
Edibles such as Wild Watercress, Wild Carrot along with the mushrooms of Autumn: Blewits, Lactarius, Velvet Foot, Gem Studded Puffballs, Lepista Irinas.
The list goes on and on. Then around noon we travel back to Stratford for a delicious lunch featuring Wild Nettle Gouda, baguettes from
the Downie Street Bakehouse, Leek Soup followed by Bison Bourguignon with mashed potatoes. Dessert: Dubai Chocolate Squares.
Of course you will have a choice of red or white wines from the Niagara Region along with locally brewed craft beers.
