Grey Trichs

As our season draws to an end there are still mushrooms out and around the Stratford area that are there to harvest. Grey Trichs (pictured here) can be found under conifers while Fall Oysters and Velvet Foot mushrooms appear on dead hardwood.

Meanwhile, Watercress is at its peak and ready to pluck from sreams and rivers.

Pear Shaped Puffballs

These are one of our favourite species of Puffballs. The size of button mushrooms their texture is quite meaty and their taste harbours a hint of sweetness. Sauteed in butter and garlic of course! We will be hunting for these "choice" mushrooms along with other fungi such as Fall Oysters, Grey Trichs, Blewits.
