Hen of the Woods Bourguignon

As usual, we close out our final Forage and Feast of the season with our popular Hen of the Woods Bourguignon. But not before we head out to trails only minutes from Stratford. Fall Oyster Mushrooms, Puffballs, Blewits, Velvet Foot and Lipista Irina to name but a few. Then it's back to town where a hearty four course meal awaits us. The menu begins with Truffle Gouda from Mountain Oak Cheese accompanied with slices of focaccia from The Downie Street Bakehouse. Our Hen of the Woods Bourguignon will be served with creamy mashed turnips and buttered broccolini. Dessert: Pumpkin Pie. Beverages will include locally brewed craft beer and both red and white wines from Niagara. Non alcohol beer and wine will also be available.

An Autumn afternoon can't get better than this.

As an added bonus each participant will receive one Hen of the Woods from Shogun Maitake for their cooking pleasure.

Lepista Irina

Lepista Irinas are a white meaty mushroom, excellent tasting when harvested young. They are found under a variety of conifers from late September through mid November.

We will also be searching for other fungi such as Fall Oysters, Grey Trichs, Blewits and Shrimp of the Woods.

Grey Trichs

Grey Trichs can be found through late October well into November. They have a dark grey cap and white stem. Found under assorted conifers sometimes by the hundreds. Greys can be frozen for up to four months. Along with these tasty fungi we will also be searching for Lepista Irina, Fall Oysters and Shrimp of the Woods.

Gem Studded Puffballs

These beauties can be found in a variety of areas under both hardwood and conifer forests. They get their name from the tiny projectiles on the cap. In a chef's world these mushrooms are classified as "choice" for taste.

Forests around Cambridge also yield bounties of Autumn mushrooms such as Fall Oysters, Grey Trichs, Shrimp of the Woods and more.

Fall Oyster Mushrooms

Unlike the delicate White Summer Oysters, this species is quite meaty with cap shades of dark grey, tan and olive green. All varieties have beautifuly golden gills. They are slow growing and can be found on standing and decaying hardwoods from mid-October until frigid temperatures set in. Along with these fungi we will also search for Grey Trichs, a variety of Puffballs, Lepista Irinas and Blewits.

Wild Watercrss and more

These are one of our favourite species of Puffballs. The size of button mushrooms their texture is quite meaty and their taste harbours a hint of sweetness. Sauteed in butter and garlic of course! We will be hunting for these "choice" mushrooms along with other fungi such as Fall Oysters, Grey Trichs, Blewits.
