Hen of the Woods Bourguignon
SOLD OUT.
We're in the early days of Autumn as those tree shadows
seem just a bit longer while the rich green of the forest floor begins to fade. Nonetheless there are rich wild edibles
to be found on trails only minutes from Stratford. Fall Oyster Mushrooms, Puffballs, Blewits, Velvet Foot and Lipista Irina to name
but a few before returning to town where a hearty four course meal awaits us. The menu begins with Truffle Gouda from Mountain Oak
Cheese accompanied with slices of fresh
baguettes from The Downie Street Bakehouse. Our main course is Hen of the Woods Bourguignon served over mashed potatoes.
Dessert will be provided by The Black Angus Bakery while beverages will include locally brewed craft beer and wines from Niagara.
An Autumn afternoon can't get better than this.
Each participant will receive one Hen of the Woods from Shogun Maitake for their cooking pleasure.

Shrimp of the Woods
Also know as Aborted Entoloma, Hunters Heart, Pig Snoot (Yuck) and Ground Prune.
They begin as a normal mushroom. Cap, stem, etc. And then . . . morph into what you see above. But here's the thing. They're edible
and they taste good. We can tell you all about them on the trails as we search for Grey Trichs, Fall Oysters, Velvet Foot and more.

Lepista Irina
These wonderful mushrooms begin to appear in late September right through until mid November. They are large, sweet tasting and oh so numerous, found under both
hardwood and conifers. Their distinct quality? Endurance. They manage to stay fresh on the forest floor for up to 3 weeks.
We will be searching for these along with their sister mushrooms the blue Blewits. Not to mention the Velvet Foot, Pear Shaped Puffballs and Autumn Oysters.

The Grey Trich
Late Autumn delivers a gem in the form of the Greys (as well call them). Collected when
young, they are wonderful sauteed in butter and garlic. They are quite numerous and found under pine trees both in the forest and,
believe it
or not, right here in Stratford. Another unique quality about them is that they can be stored in the freezer and used months
later. They look and taste just as fresh as the day you picked them.
