The Fall Oyster is a durable, meaty mushroom that decorates decaying wood throughout late Autumn. This fungi appears in three different colours. Brown, tan and olive green. All have the same golden finish in their gills. Fall Oysters grow alongside Pear Shaped and Gem Studded Puffballs giving the forager a hearty variety of Mother Nature's offerings.

Another of Mother Nature's meaty mushrooms is the Blewit. Mostly found under conifers, this delicacy will fruit right through until the first serious frost. Once collected the mushroom hunter has a second adventure in store. Consuming them! Sauteed in butter and garlic or roasted on the grill, they are truly an item fit for a gourmet. We'll be searching for these as well as Fall Oysters, Pear Shaped Puffballs, Velvet Foot and more.

We've features mushrooms for their taste. But what about mushrooms that make other mushrooms taste better? Well the Tinder Polypore is just that fungi. Amazingly, they are a natural replacement for charcoal. Toss these "hard as a rock" specimens into your grill and they will burn for up to 45 minutes, sending their earthy fragrances into whatever you are cooking. Tinder polypores are found primarily on birch and beech, in the same areas we find Fall Oysters, Velvet Foot, Gem Studded Puffballs and more. So bring your bags and baskets
and join us on the trails.

One of the most durable mushrooms we harvest is the Velvet Foot. Classified as a Winter Mushroom these fungi will grow on dead standing hardwood right through late March. They have a sticky cap and very active white spores but all this disipates in the cooking. When doing so, you will notice how juices form. This, in fact, is a natural gravy thickener.

Velvet Foots will entice your culinary imagination along with Blewits, Fall Oysters and Pear Shaped Puffballs all found on the trails of Autumn.
